Japanese Inlay and Marking Knives (Kogatana Standard), right bevel
Hand-forged blades made of multi-layered steel have the following advantages:
1. Superior edge-holding capacity
2. Higher attainable sharpness
3. Better sharpenability
Double-bevel knives are for all-purpose use. Single-bevel knives are for making cuts along a straight edge and for making cuts with perpendicular edges (e.g.for marquetry or veneer work).
The slight hollow grind on the non-beveled side facilitates sharpening. The blades are hardened along their entire length to approx. 58 RC, (Suminagashi to approx. 64 RC). We recommend wrapping the handles with a strip of leather, as is traditionally done in Japan.
Length approx. 160 - 180 mm, thickness approx. 2 - 3 mm.
Sharpening pass for a two times free sharpening.
